The "Pergamino" is a selection of the lots picked in the middle of the harvest, when coffee is at the peak of maturation. Only the ripe cherries are pulped, and the beans, still coated by the mucilage, are sun dried for a few days, to allow that sugary substance to be absorbed.

Using strict quality control during all phases of production and processing, our cuppers select a mere 25% of our production to be labeled as "Pergamino".

The most discerning Espresso minded roasters all over the world use coffees from this area in their top blends, and they are now offering pure varieties from Sul de Minas as ultimate single origin espressos.

This brand was developed in 1997 to guarantee the identification of the highest standard of excellence in a customized product from a region with a long tradition of production of fine coffees.
